Labor Day is officially over and with it brings Fall, not wearing white and often leftover grilled meats! Yesterday to celebrate labor day, we grilled a bunch of ribs but when we were left with an entire rack and didn't feel like ribs again today, I knew I had to get creative. And the results were amazing and perfectly timed for Taco Tuesday...Leftover Rib Tacos!
Ingredients
- 1 leftover rack of pork ribs
- 3 bell peppers (try 1 yellow, 1 red and 1 green for color)
- 1/2 large yellow onion
- 1 cup cabbage
- 1 cup cheese
- 1/2 cup enchilada sauce
- 1/2 cup salsa
- Tortillas
Directions
- First you need cooked ribs or other steak or pork cuts! These can be freshly grilled or left over! I cut rib meat off the bone and into bite sized pieces.
- Next, cut onions and bell peppers into strips.
- In a small skillet, sauté the vegetables with salt, pepper and salsa until soft.
- Heat a second skillet to high heat with oil and add chopped rib meat. Sauté for 5 minutes, until crispy and add enchilada sauce. Sauté on low with enchilada sauce for another 5-10 minutes (helps to soften the meat)
- Warm tortillas and begin to layer ingredients - Add vegetables, followed by meat, cheese, cabbage and a drizzle of extra salsa or italian dressing for a kick.
- Serve and enjoy!
