Chicken and Vegetable Pasta with Light and Creamy Madeira Sauce
Ingredients
- 1/2 Package of Pasta
- 1 lbs Chicken Renders
- 1 slice of Bacon
- 2 cups Brussel Sprouts
- 2 cups Mushrooms
- 1/2 cup Madeira Wine
- 1/2 cup Parmesan Cheese
- 1/4 cup Heavy Whipping Cream
- 1 tablespoon - Thyme
- Salt and Pepper to taste
Directions
- Cut chicken into cubes.
- Dice onions and 1 slice of bacon (ok 2 slices if you must!)
- Sauté diced bacon for 3-4 minutes until slightly crispy
- Add onions and mushrooms for another 2 minutes
- Add cubed chicken and allow to cook thoroughly.
- Once onions, mushrooms and chicken are cooked, add salt, pepper, 1 tablespoon thyme and 1/2 cup Madeira wine and allow to simmer for 3 to 4 minutes to allow the alcohol in the wine to burn off.
- Add frozen green peas and microwaved brussels sprouts (if you prefer not to microwave first, add them at the same step as the mushrooms and onion).
- Immediately add 1/2 cup of parmesan and 1/4 cup heavy whipping cream and allow everything to simmer for about 5 minutes.
- Serve plain, over rice or mixed with vegetable pasta!
