Once onions, mushrooms and chicken are cooked, add salt, pepper, 1 tablespoon thyme and 1/2 cup Madeira wine and allow to simmer for 3 to 4 minutes to allow the alcohol in the wine to burn off.
Add frozen green peas and microwaved brussels sprouts (if you prefer not to microwave first, add them at the same step as the mushrooms and onion).
Immediately add 1/2 cup of parmesan and 1/4 cup heavy whipping cream and allow everything to simmer for about 5 minutes.
Serve plain, over rice or mixed with vegetable pasta!
