Ingredients
- Cook taco mix in skillet (ground beef, black beans, corn, zucchini and salsa cooked together in skillet
- In another small pot heat up low fat refried beans on low heat. Add 1 cup chicken stock and 1/2 cup of mexican cheese mix until warm and easy to spread on tortillas
- Spread refrained bean mixture on whole wheat tortillas
- Place whole wheat tortilla on outside of tortilla shell (making the double decker shell)
- Put taco mixture inside tortilla shell and top with a sprinkle of cheese
- Serve with a side of sour cream and salsa
