Ingredients
- 3 lbs raw boneless skinless chicken breasts
- 1 large onion, chopped
- 3 large cloves of garlic, chopped
- 1 can red enchilada sauce
- 1 can green enchilada sauce
- 1 28 oz. can crushed tomatoes
- 1 12014 oz. can diced tomatoes
- 1 small can chopped green chile
- 1 can black beans (drained and rinsed)
- 8 oz bag of frozen yellow corn
- 2 tsp chili powder
- 2 tsp cumin
- 2 tsp salt
- 1/2 tsp black pepper
- Cilantro, chopped
- 2 cartons chicken broth or until crock-pot is filled to the brim
Recipe
- Place the chicken breasts in your slow cooker
- Add all other ingredients and finish by adding chicken broth
- Cook on high for 4 hours or low for 6 hours
- Take chicken out and shred (should fall apart easily)
- Put shredded chicken back in brother to simmer for a 20 more minute
- Serve with tostadas or fresh bread, shredded cheese, and avocado
