- 4 medium sweet onions, thinly sliced
- 3 garlic gloves, minced
- 4 tablespoons butter
- 3 tablespoons flour
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- 2 tablespoons fresh thyme
- 1 teaspoon pepper
- 1 teaspoon salt
- 8 ounces of beer
- 64 ounces of law-sodium beef stock
- french bread
- gruyere cheese - grated
- swiss cheese- grated
- parmesan cheese- grated

- gruyere cheese - grated

- parmesan cheese- grated
Directions
- Set crock pot on high
- Cut onions thinly and mince garlic
- Add onions, garlic, brown sugar, salt, and balsamic and mix to combined.
- Add room temperature butter and mix again to combine with other ingredients
- Cover and let cook for 60 minutes, until onions are soft and brown on edges.
- Add flour and stir thoroughly. Let cook for about 5-10 minutes with flour mixture.
- Add beer, beef stock thyme and pepper and cook for 4-5 hours.
- Drink rest of beer ;)
- Once soup is complete, taste for seasoning and add more salt or pepper as needed
- Turn on broiler
- Put soup into individual bowls, cover with french bread and a handful of mixed cheeses and place in boiler.
- Tip: I used the lid of the bowl to cut bread into the perfect shape!
- Leave under broiler for 2-3 minutes or until cheese is bubbly and turning brown at the edges.
- Serve on a plate as bowl will be VERY HOT!
