Garlic Basil Linguini With Shrimp, Capers and Garlic





Ingredients
  • 1 lb dried linguini (Trader Joe's Garlic Basil Linguini is best!!)
  • 1 lb medium shrimp, peeled and deveined
  • 5 tablespoons of olive oil
  • 5 tablespoons of butter
  • 3 tablespoons capers
  • 1 cup white wine
  • 4 gloves of garlic, minced
  • 1 small onion
  • 1 lemon
  • 3 tablespoons finely chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Parmesan cheese

Directions

  • Bring water to boil and cook pasta al dente
  • While pasta cooks, heat butter and add onion and garlic for one minute on high heat
  • Add shrimp. capers, parsley, salt and pepper (4-6 minutes)
  • When shrimp are pink and cooked add white wine and lemon juice and allow to simmer for 4 more minutes
  • Drain pasta, throw back into warmed pot and add parmesan cheese.
  • Add shrimp and sauce to pasta/cheese mixture and toss. If pasta and sauce seem dry add a splash more of wine and olive oil
  • Garnish with a spring of parmesan cheese and a few raw capers and serve with the remaining white wine!
