Ingredients
- 1 lb dried linguini (Trader Joe's Garlic Basil Linguini is best!!)
- 1 lb medium shrimp, peeled and deveined
- 5 tablespoons of olive oil
- 5 tablespoons of butter
- 3 tablespoons capers
- 1 cup white wine
- 4 gloves of garlic, minced
- 1 small onion
- 1 lemon
- 3 tablespoons finely chopped fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Parmesan cheese
Directions
- Bring water to boil and cook pasta al dente
- While pasta cooks, heat butter and add onion and garlic for one minute on high heat
- Add shrimp. capers, parsley, salt and pepper (4-6 minutes)
- When shrimp are pink and cooked add white wine and lemon juice and allow to simmer for 4 more minutes
- Drain pasta, throw back into warmed pot and add parmesan cheese.
- Add shrimp and sauce to pasta/cheese mixture and toss. If pasta and sauce seem dry add a splash more of wine and olive oil
- Garnish with a spring of parmesan cheese and a few raw capers and serve with the remaining white wine!
