Spicy Sausage, Walnut and Gorgonzola Pasta
Ingredients
- 1 1/2 lb pasta
- 6 spicy sausage links
- 2 cup gorgonzola cheese, crumbled
- 3 cup parmesan cheese, grated
- 1 cup whipping cream
- 1 cup finely chopped walnuts
- 1 onion, diced
- 2 tbsp butter
- 1 1/2 tsp thyme
Directions
- Heat pot of water and cook pasta al dente
- Using food processor or knife, thinly chop walnuts
- In a medium skillet melt butter
- Add diced onion and thyme
- After sautéing for a few minutes add spicy saucy - either sliced or taken out of casing like ground beef
- Add salt, pepper and let simmer for a few minutes
- Once meat is browned add finely chopped walnuts
- Cook for 3 more minutes then add whipping cream
- Once whipping cream has mixed into all ingredients in the skillet, Add cheeses, one cup at a time, allowing to slowly melt
- Allow all cheeses to melt and coat other ingredients
- If the sauce looks too thick add 1/4 cup of chicken stalk to help smooth out and make creamier
- Drain pasta and add pasta to skillet. Allow sauces to simmer and coat pasta for a few minutes.
- Serve and top with a sprinkle of parmesan!
I'm in between bites of this delicious pasta (Cody's leftovers) as I write this comment, and I have to say, Bravo! The walnuts do a great job of adding a nice stiffness to this cheesy treat and I also really enjoy your choice in sausage.
