Ingredients
- 2 lbs large carrots - peeled and cut either sliced or length wise
- 5 cloves garlic
- Half onion thinly sliced
- 1 1/2 cup apple cider vinegar
- 1/2 cup water
- 5 bay leaves
- 1 teaspoon oregano
- Your choice of peppers - my boyfriend and I went with fresh jalapeño, canned jalapeño, Serrano and a habanero
Directions
- Put peeled and cut carrots in a pot of water, bring to a boil and let boil for 3 minutes
- Drain water and put carrots in jars
- In a smaller sauce pan put water, vinegar, garlic, onion, bay leaves and oregano. Bring to a boil
- Add chiles and let simmer for 3 minutes
- Pour hot liquid including garlic, onions and chiles over the carrots and close jars
- Be patient!!For best results allow to sit in fridge for at least 1 week!
