Ingredients
- 6-8 ounces chorizo or soyrizo from Trader Joes
- 4 ounces fined chopped pickle jalapeños
- 18 medium potabella mushrooms
- 1/4 cup parmesan cheese
- 1/4 cup mexican cheese blend
Directions
- Preheat oven to 350 degrees
- Remove stems from mushrooms -should pop out fairly easily
- Remove casing from chorizo/soyrizo
- mix onion, chopped jalapeno, chorizo/soyrizo, and cheeses
- Add mixture to mushroom caps and bake for 20 minutes!
