Healthy Vegetable, Beef Bolognese
Ingredients
- 1 1/4 lb ground beef
- 1 cup finely chopped onion
- 1 cup finely chopped carrot
- 1 cup finely chopped zucchini
- 1 cup finely chopped mushrooms
- 1 bag baby spinach
- 1 jar tomato sauce
- table spoon balsamic vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon garlic salt
- teaspoon pepper
- teaspoon thyme
- 1/4 cup of parmesan cheese
Directions
- Bring a large pot of salted water to a boil. Once boiling, add the noodles and cook al dente. When pasta has 3-5 more minutes remaining to cook, add bag of spinach to boiling water. When done, drain and toss with 2 teaspoons of virgin olive oil.
- While noodles are cooking, dice onions, carrots, zucchini and mushrooms.
- Heat sauté pan on medium high. Add the finely chopped onion and carrot. Sprinkle with salt, garlic salt, pepper thyme and balsamic vinegar.
- Once the carrots and onions have cook down, add the zucchini and mushroom and cook for an additional 5 minutes.
- While cooking the vegetables, heat another sauté pan on medium heat and cook the ground beef - stirring often to break apart ground beef finely.
- Drain beef and add to cook vegetables.
- Add jar of tomato sauce, and parmesan cheese and allow to simmer for 2 minutes
- Add pasta to sauce and let pasta to simmer in sauce for an additional 3-5 minutes, stirring occasionally
- Serve topped with a sprinkle of parmesan cheese
