Pesto and Pea Pasta

Hello suitsandaprons followers! After a (gulp) 2 year break from blogging, I have decided to start blogging and sharing my food recipes again! In the last two years I moved from SD to SF and have continued cooking and have some awesome recipes to share with you! I started suitsandaprons as a blog for busy young professionals who need easy recipes and will continue to focus on those kinds of recipes!

This first pasta recipe is inspired by one by the Pioneer Woman but I've made some changes including adding kale and more garlic! It's one of my absolute favorites. Enjoy :)


Ingredients:
  • Cavatappi Pasta
  • 1 up fresh basil leaves
  • 1/2 cut fresh mint
  • Bunch of kale
  • 2 cups frozen peas
  • 4 tablespoons pine nuts
  • 4 garlic cloves
  • 1 cup grated Parmesan Cheese
  • 1/3 cup virgin olive oil
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • Salt and Peper
Directions:
  1. Cook pasta according to package. When half way through cook time, add 1 cup peas to the water and cook pasta and peas for remaining time.
  2. Add basil, mint, kale, 1 cup thawed peas, pine nuts, garlic, 1/2 cup Parmesan, salt and pepper to food processor. Turn on food processor and slowly add olive oil as it mixes. Continue until smooth, adding more olive oil if necessary.
                           
      3. Heat cream and butter in a small sauce pan and stir in remaining Parmesan
      4. Drain Pasta and peas and pour cream mixture over pasta. Then add pesto, toss and serve!
