Spicy Pasta Salad with Smoked Gouda, Tomatoes, and Basil


  • 1 box of penne pasta
  • 10 ounces grape tomatoes
  • 8 ounces smoked Gouda cheese
  • 24 whole basil leaves
  • 1/2 cup mayonnaise
  • 1/4 cup 2% milk
  • 4 tablespoons white vinegar
  • 1 1/2 teaspoons adobo sauce from chipotle Peppers
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

  • Cook pasta and then drain and rinse in cold water until no longer hot. Set aside.
  • Cube Gouda cheese and halve tomatoes

  • In a small bowl, mix mayo, milk, vinegar, salt, pepper and adobo sauce
  • In large bowl, stir together cooled pasta, halved tomatoes, cubed Gouda and dressing.
  • Taste for seasoning and add more salt, pepper or vinegar if necessary.
  • Stir in basil and refrigerate for a couple hours before serving!
