Crock-Pot Chicken Parmesan Soup


It is officially winter and in honor of Christmas, I wanted to share my Crock-Pot Chicken Parmesan soup! It's the ultimate comfort food, super easy AND the colors of Christmas. Put the ingredients in around 10 am and you'll have amazing homemade soup by dinner! Enjoy and Happy Holidays!

Ingredients 
  • 1/2 pound raw bondless chicken 
  • 3 garlic cloves - minced
  • 1 bell pepper - chopped
  • 1 white onion - chopped
  • 1 can crushed tomatoes (14.5 ounces)
  • 3 cups chicken broth
  • 1/2 cup shredded Parmesan cheese
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh oregano
  • 1/2 teaspoon red pepper flakes

Directions
  • Place chicken in crock-pot.
  • Chop garlic cloves and onion and add to crock-pot.
  • Chop and add bell pepper.
  • Mix in crushed tomatoes, chicken broth, cheese basil oregano and red paper flakes.
  • Cook on high for 3 hours or low for 7 hours.
  • Remove chicken breasts and shred with forks.

  • Place shredded chicken back into soup and cook on low for 1 more hour.
  • Serve and garnish with a sprinkle of parmesan cheese and chopped basil.
