Chicken and Vegetable Pasta with Light and Creamy Madeira Sauce

  • 1/2 Package of Pasta
  • 1 lbs Chicken Renders
  • 1 slice of Bacon 
  • 2 cups Brussel Sprouts 
  • 2 cups Mushrooms
  • 1/2 cup Madeira Wine
  • 1/2 cup Parmesan Cheese
  • 1/4 cup Heavy Whipping Cream
  • 1 tablespoon - Thyme
  • Salt and Pepper to taste

  • Cut chicken into cubes.
  • Dice onions and 1 slice of bacon (ok 2 slices if you must!)
  • Sauté diced bacon for 3-4 minutes until slightly crispy
  • Add onions and mushrooms for another 2 minutes

  • Add cubed chicken and allow to cook thoroughly. 
  • Once onions, mushrooms and chicken are cooked, add salt, pepper, 1 tablespoon thyme and 1/2 cup Madeira wine and allow to simmer for 3 to 4 minutes to allow the alcohol in the wine to burn off.
  • Add frozen green peas and microwaved brussels sprouts (if you prefer not to microwave first, add them at the same step as the mushrooms and onion).
  • Immediately add 1/2 cup of parmesan and 1/4 cup heavy whipping cream and allow everything to simmer for about 5 minutes.
  • Serve plain, over rice or mixed with vegetable pasta!
