Crock-Pot Tortilla Soup




Ingredients


  • 3 lbs raw boneless skinless chicken breasts 
  • 1 large onion, chopped
  • 3 large cloves of garlic, chopped
  • 1 can red enchilada sauce
  • 1 can green enchilada sauce
  • 1 28 oz. can crushed tomatoes
  • 1 12014 oz. can diced tomatoes
  • 1 small can chopped green chile
  • 1 can black beans (drained and rinsed)
  • 8 oz bag of frozen yellow corn
  • 2 tsp chili powder
  • 2 tsp cumin
  • 2 tsp salt
  • 1/2 tsp black pepper
  • Cilantro, chopped
  • 2 cartons chicken broth or until crock-pot is filled to the brim


Recipe

  1. Place the chicken breasts in your slow cooker
  2. Add all other ingredients and finish by adding chicken broth
  3. Cook on high for 4 hours or low for 6 hours
  4. Take chicken out and shred (should fall apart easily)
  5. Put shredded chicken back in brother to simmer for a 20 more minute
  6. Serve with tostadas or fresh bread, shredded cheese, and avocado
