Flank Steak with Chimichurri Sauce





Ingredients
  • 1 1/2 lb flank steak
  • 2 cups lightly packed chopped parsley - flat leaf "italian" parsley
  • 6 gloves garlic
  • 1/4 cup white vinegar
  • 1/2 cup of olive oil
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon of cayenne pepper
  • teaspoon salt
  • teaspoon pepper


Directions

  • Preheat Grill
  • Mix coriander, cumin, 1/2 teaspoon of salt and pepper
  • Pat flank steak dry and coat with spice mixture


  • Place steak directly on hot grill for about 6-8 minutes per side. Remove from heat and wrap in tin foil for 15 minutes before thinly slicing.


  • Meanwhile, put garlic in food processor and pulse
  • Add parsley, white vinegar, olive oil, cayenne pepper, remaining 1.2 teaspoon of salt and peper and pulse until finely chopped sauce
