Spicy Pickled Carrots


Ingredients

  • 2 lbs large carrots - peeled and cut either sliced or length wise
  • 5 cloves garlic
  • Half onion thinly sliced
  • 1 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 5 bay leaves
  • 1 teaspoon oregano
  • Your choice of peppers - my boyfriend and I went with fresh jalapeño, canned jalapeño, Serrano and a habanero

Directions

  • Put peeled and cut carrots in a pot of water, bring to a boil and let boil for 3 minutes
  • Drain water and put carrots in jars
  • In a smaller sauce pan put  water, vinegar, garlic, onion, bay leaves and oregano. Bring to a boil
  • Add chiles and let simmer for 3 minutes
  • Pour hot liquid including garlic, onions and chiles over the carrots and close jars 
  • Be patient!!For best results allow to sit in fridge for at least 1 week!
