Chorizo and Jalapeño Stuffed Mushrooms




 Ingredients
  • 6-8 ounces chorizo or soyrizo from Trader Joes
  • 4 ounces fined chopped pickle jalapeños
  • 18 medium potabella mushrooms
  • 1/4 cup parmesan cheese
  • 1/4 cup mexican cheese blend

Directions

  • Preheat oven to 350 degrees
  • Remove stems from mushrooms -should pop out fairly easily
  • Remove casing from chorizo/soyrizo
  • mix onion, chopped jalapeno, chorizo/soyrizo, and cheeses
  • Add mixture to mushroom caps and bake for 20 minutes!
