Ham and Cheese Mini Frittatas


Today I got home from work around 6 and all I wanted for dinner was breakfast! But the idea of making eggs and bacon sounded like a lot of standing over the hot stove and rather unimpressive for my new blog... then a light bulb went off! Frittatas! These Mini Frittatas require 5 ingredients (plus salt and pepper) and are cooked in the oven. Perfect breakfast for dinner meal and even better the next day warmed up for breakfast or lunch at the office as well! Enjoy :)


Ingredients

  • 8 large eggs
  • 1/2 cup whole milk
  • ounces finely chopped ham
  • 1/3 cup grated parmesan
  • 2 tablespoons finely chopped fresh Italian parsley
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon salt

Directions

  1. Heat oven to 375 degrees
  2. Mix all ingredients in a large bowl
  3. Spray 1 muffin tin (12 cups) or 2 mini-muffin tins (each with 24 cups)) with nonstick spray
  4. Fill cups almost to the top with egg mixture
  5. Bake until eggs just and are just set in center - 10-12 minutes
  6. Using rubber spatula, loosen frittatas from the muffin tins
  7. Serve immediately or at room temperature
